Enjoy this delicious recipe to warm up on a chilly winter day with CORN CHOWDER
INGREDIENTS
- 2 cups corns (or 1 can corn), 2 cups potatoes, cut in 1⁄4 inch slices 1 1⁄2 inch cube bacon
- 1 sliced onion
- 4 cups scalded milk
- salt and pepper
Strip corn of kernels;
Cook bacon in small pieces and fry out (render);
Add onions and cook five minutes, stirring often;
Strain bacon into a stew pan. Parboil potatoes five minutes in boiling water to cover;
Crop in 1 1/2 inch cube potatoes
Drain and add potatoes to bacon;
Add two cups boiling water;
Cook until potatoes are soft, add corn and milk, then heat to boiling point. Season with salt and pepper.
Serve.
