Oatmeal is one of the healthiest breakfast options. With its high fiber content, oatmeal is sure to kickstart your day in the best way possible.

 

Here are 3 simple, delicious and healthy oatmeal recipes!

 

  1. STRAWBERRIES AND CREAM OATMEAL 

Ingredients:

  • 2 cups rolled oats
  • 2 cups chopped strawberries
  • 2 tablespoons chia seeds
  • 1 banana, medium
  • 1 teaspoon vanilla extract
  • 4 cups almond milk, unsweetened
  • 2 tablespoons maple syrup

Directions:

First, prep fruit by mashing 1 banana and finely dicing strawberries. Place in a medium-size sauce pan and add the rest of the ingredients. Turn to medium/high heat and bring to a boil. Then reduce heat to medium and let cook until thick and creamy, stirring often.

2. VEGAN PEANUT BUTTER CUP OVERNIGHT OATS 

Ingredients: 

Peanut butter layer

  • 1 cup quick cooking oats
  • 1.25 cups Silk Unsweetened Vanilla Almond milk
  • 2 teaspoons chia seeds
  • 1 tablespoon honey (or any kind of sweetener such as agave or maple syrup)
  • 2 teaspoons ground flax seed
  • 2 tablespoons all-natural peanut butter
  • pinch of salt

Chocolate layer

  • 1 cup quick cooking oats
  • 1.5 cups Silk Unsweetened Vanilla Almond milk
  • 2 teaspoons chia seeds
  • 1 tablespoon maple syrup (or any kind of sweetener such as honey or agave)
  • 2 teaspoons ground flax seed
  • 3 tablespoons cocoa powder
  • pinch of salt 

Directions:

FOR THE PEANUT BUTTER LAYER, place all ingredients into a glass container and mix. Place in refrigerator for at least 2 hours or overnight.

FOR THE CHOCOLATE LAYER, place all ingredients into a glass container and mix. Place in refrigerator for at least 2 hours or overnight.

FOR THE PEANUT BUTTER CUP OVERNIGHT OATS, in a jar (we used a 1/5l Weck jar), layer the peanut butter and chocolate overnight oat mixture. Top with all natural peanut butter and a few chocolate chips.

 3. BLUEBERRY BAKED OATMEAL

Ingredients:

  • 2 eggs
  • 1/2 cup applesauce — unsweetened
  • 1/3 cup brown sugar
  • 1 tablespoon vanilla extract
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 3 cups old fashioned oats
  • 1 cup milk — nonfat or almond milk, vanilla unsweetened is what I use
  • 1 cup fresh or frozen blueberries

Directions:

Preheat oven to 350°F. Spray an 11x7 or a 9x13 pan with nonstick cooking spray.

Whisk eggs, applesauce, brown sugar, and vanilla until smooth. Stir in cinnamon, salt, and baking powder. Stir in oats and milk. Gently fold in blueberries. Spread in prepared pan.

Bake for 28-34 minutes until oatmeal is browned and not jiggly in the center. Cool slightly before serving. Serve with syrup and/or fruit or vanilla yogurt.

Store in refrigerator up to 2 days. You can also portion and freeze for quick morning breakfasts!
